Cassia is the cinnamon Indian kitchens actually cook with. Thick, hard, dark reddish-brown, rolled in a single heavy curl - this is the dalchini that goes into a pulao, a garam masala or a pot of chai. It is bolder and hotter than Ceylon cinnamon, with a deep, sweet-spicy note that survives long cooking instead of disappearing into it.
Ours is hand harvested and sun dried by the farmers who grow it, then sorted and packed into a reusable glass jar rather than a plastic pouch, so the volatile oils that carry the aroma stay where they belong. Nothing is added: no preservatives, no additives, no MSG, no fillers, non-GMO.
Both are real cinnamon. They are different species and they behave differently in a pan, so the honest answer is that it depends on what you are cooking.
One difference worth knowing before you choose: cassia naturally contains more coumarin than Ceylon does. At normal cooking quantities that is not something to worry about, but if you take cinnamon every single day in large amounts - a spoon of powder in a drink each morning, say - Ceylon is the better habit. We stock both, and we would rather you bought the right one than the dearer one.

Ceylon is thin, pale and brittle, with many fine layers, and it is sweeter and more delicate - better for baking and desserts. Cassia also carries more coumarin than Ceylon, which matters only if you take cinnamon in large amounts every single day; for cooking, it does not.
Yes, and freshly ground cassia is far more fragrant than anything sold ready-ground. Cassia is hard, so break a stick into small pieces first and grind it in a dry spice or coffee grinder in short bursts. Grind only what you need for a week - powder loses its aroma within weeks, while the sticks hold it for a year and more.
One two-inch piece is enough for a pot of pulao, a curry or a pan of chai for four. Add it whole at the start, into hot ghee or oil, and lift it out before serving.
